Italian Turkey Sausage, Kale and Great Northern Bean Soup



All I can say is wow. This was very good and it only took 45 minutes to cook. This soup
is full of flavor.

I love dishes that require only one pot.

Here is the recipe:

1 package of hot Italian turkey sausage (remove the casing)
1 large onion
2 cloves of garlic (minced)
8 cups of low sodium chicken stock
2 - 15oz cans of Great Northern Beans (drain and rinse)
1 bag of kale greens
salt and pepper to taste

In a large dutch oven brown your sausage, onion and garlic.

Once the sausage have browned add in your chicken stock and kale greens. Add
salt and fresh ground pepper if needed.

Let it simmer on medium heat for 20-35 minutes (or until the greens are tender).

Serve with corn muffins or a turkey and roast beef sandwich.

If you are a vegetarian you can remove the sausage and add some cayenne pepper or
hot pepper flakes.

Paula Deen used swiss chard greens which she mentioned were a bit bitter.
I could not find swiss chard so I used kale. You can check out her recipe here

I found great northern beans in the can in the canned vegetable isle at Jewel. I'm sure they
sell them at most grocery stores. There are several brands to choose. Randall's is
one brand.
